Food meets fashion at this new eco tea pop-up
As central London’s first five-star B Corp hotel, One Aldwych has made impressive strides in the world of green hospitality – from introducing pioneering energy-saving techniques to overhauling its food supply chains. And now, the Covent Garden hotel has joined forces with lab-grown jewellery brand Anabela Chan on a summer tea pop-up, continuing its mission to make the world of sustainability fun and fashionable.
One Aldwych x Anabela Chan: Two Eco Brands Are Joining Forces
Launching this July, the Summer Tea Salon offers guests iced teas and sweet treats inspired by Chan’s latest collection, Fruit Gems. The innovative range creates jewellery from over-ripened fruits by extracting the pigment from foods like bananas, blueberries, tomatoes and spinach, transforming them into gemstones that can be crafted into jewellery.
It’s a fitting pairing for the hotel’s executive chef Dominic Teague, who is big on cutting food waste. He has created a trio of treats, designed to be enjoyed alongside a selection of iced teas within One Aldwych’s Lobby Bar – flavours include Berry & Hibiscus, Rhubarb & Rose or Elderflower & Apricot. Alternatively, champagne from fellow B Corp Bollinger is on offer.

Pastries-wise, the Beetroot Cherry Apple features layers of blackberry and beetroot mousse, with a lychee centre and a cherry-red glaze, while the Apricot Mille-Feuille is a crisp, caramelised puff pastry layered with apricot and honey compote – made from the hotel’s own rooftop hives. The third is a Raspberry Magic Mushroom, which includes a raspberry jelly and lemon foam, topped with caramel tuiles and white chocolate.
While enjoying this, visitors can check out Chan’s new collection, which will be on display in the hotel. You can also book personal shopping experiences, or arrange an in-suite viewing.
Chan came up with the idea for the Fruit Gems collection after learning that 4.4 billion tonnes of food waste goes to landfill in the US every year alone. ‘I thought to myself, what if we can take perfectly good fruits and vegetables beyond their sell-by dates and turn them into a new genre of gemstones synthesized from natural matters?’, she said. The range includes innovative pieces like the Beetroot Lotus Earrings, the Spirulina and Spinach Garden Ring, and the Sapphire Potato Petunia Ring.
For every table that’s booked, £1 will be donated to one of Chan’s chosen charities, Seeds for Growth, which works to support disadvantaged communities in London through projects such as community gardens and food co-ops.
One Aldwych secured B Corp status in November 2024. Granted by B Lab, the certification involves meeting high standards of social and environmental performance, plus transparency and accountability. The hotel has a carbon footprint monitoring system, supports causes including London homelessness charity The Connection at St. Martin’s, and all amenities come from UK brands, such as bathroom products from Mitchell and Peach in Kent, and woven blankets from Skye Weavers on the Isle of Skye.
Alongside the Lobby Bar, the hotel boasts a restaurant, Indigo, which celebrates British produce with both an a la carte and a tasting menu. For those keen to stay over, the hotel has 101 bedrooms including a number of suites.

Launched in 2013, Chan’s eponymous jewellery brand was ahead of the curve, being the world’s first fine jewellery brand to champion lab-grown gemstones and recycled materials. The gems are responsibly sourced, then hand-crafted into jewellery by artisans, with collections including rings, earrings, necklaces, bracelets and brooches. Anabela Chan is a favourite with A-listers too: everyone from Taylor Swift to Rihanna and Dua Lipa has worn them over the years.
