The origin of the mimosa is debated, but generally it’s thought the cocktail was created by Frank Meier, a French bartender at the Ritz Hotel in Paris, who included a recipe in his book The Artistry of Mixing Drinks.
Mimosas are one of the easiest cocktails to make, requiring just two ingredients: either prosecco, sparkling wine or champagne, and orange juice. The ratio is really up to you – the more fizz, the stronger the drink – but many recipes suggest equal parts of each. Use a high-quality, pulp-free, chilled orange juice, and a dry or semi-dry sparkling wine, as this balances out the sweetness of the juice.

Christmas Morning Mimosa Recipe
The classic mimosa is simple – but fear not: the festive version isn’t too tricky either. The key here is jazzing up the drink with some ice cubes frozen with seasonal ingredients to add that Christmassy feel, such as oranges and rosemary, alongside cranberry and apple juice. Big ice cube moulds work well here, and a coupe glass is ideal as there’s more space (plus it looks pretty).
Ingredients:
Makes 6
- 120g cranberries
- 6 sprigs of rosemary
- 125ml cranberry juice
- 12ml apple juice
- 1 bottle of prosecco, sparkling wine or champagne
Equipment:
- Ice cube mould
- Coupe glasses
Method:
- Fill your ice cube tray with cranberries, then pour cranberry juice into each up to the halfway mark. Then add apple juice – but leave a bit of space at the top of each, as the liquid will expand once frozen.
- Add a sprig of rosemary in each.
- Freeze overnight (or for a few hours until completely frozen).
- Carefully remove each ice cube from the tray, and place one in each coupe glass.
- Pour the sparkling wine on top, and enjoy!
