Vanilla Madeleines Recipe

“These are my simple vanilla madeleines, you can easily create different tastes by adding lemon zest, orange zest, honey, chocolate chips… the possibilities are endless!”


  • 3 eggs
  • 100g caster sugar
  • 100g plain flour
  • 100g butter melted
  • ½ tsp of baking powder
  • Vanilla paste or pods for extra flavours


  1. In a bowl mix together eggs and caster sugar for 1-2 minutes
  2. Add the baking powder and the flour in gradually (a third at a time)
  3. Once combined, add the melted butter, do not over mix
  4. Place in the moulds about three quarters full and leave it to chill for at least 2h, if you don’t have that much time leave it in the freezer for 1 hour
  5. What makes them rise like a camel is the swap from the cold to the oven
  6. In a pre-heated oven of 180 degrees cook the madeleines for 13 minutes
  7. Let it cool for 2 minutes and then transfer to a rack to cool (eat one still warm if you can’t resist)
  8. They will stay fresh over 4 days in an airtight container
