Along with pumpkin pie and roast turkey, devilled eggs are a regular feature on Thanksgiving tables across America and beyond. Light, relatively simple to make and boasting an aesthetic look, they can be jazzed up in all sorts of ways – and for 2024, it’s all about the Bloody Mary variety, which sees devilled eggs made with the flavours of the classic cocktail.

What Are Devilled Eggs?

Also known as stuffed eggs, devilled eggs made by hard-boiling eggs, then peeling and halving them. The yolk is scooped out, making space for a filling, which is traditionally a mix of mustard, mayonnaise and spices such as paprika. However, the options are endless: some recipes incorporate curry powder or Tabasco, others add cheese, bacon or smoked salmon.

Where Did The Name Come From?

It’s thought devilled eggs go all the way back to ancient Rome, where they were boiled and seasoned with spicy sauces, then served at the beginning of fancy banquets. However, it wasn’t until the late 19th century that devilled eggs as we know them started being enjoyed – a cookbook from 1896 was the first to suggest using mayonnaise to help bind the egg yolks together.

The term ‘devilled’ in food is usually used to describe dishes that are heavily spiced with the likes of paprika and mustard powder – or just very spicy.

What Are Bloody Mary Devilled Eggs?

Bloody Mary devilled eggs involve creating a filling using the ingredients of the breakfast cocktail, including horseradish, tomato paste, hot sauce and celery. 

Bloody Mary Devilled Eggs Recipe

Ingredients:

  • 6 eggs
  • ½ tbsp tomato paste
  • ½ tbsp horseradish
  • 1 tbsp hot sauce
  • 60ml mayonnaise
  • Salt and pepper
  • Celery leaves, to garnish
  • Optional: tajin

Method:

  1. Begin by hard-boiling your eggs. Place them in a large pot of water and bring it to the boil. Once the water begins to boil, turn off the heat, cover the pot and leave for 10 – 12 minutes.
  2. Allow the eggs to cool, then slice them in half and scoop out the yolk, placing the yolks into a bowl.
  3. Add the tomato paste, horseradish, hot sauce and mayonnaise to a bowl and mix well. 
  4. Season with salt and pepper.
  5. Optional: dip the cut side of the eggs in tajin or another spice. 
  6. Fill the gaps with your mixture.
  7. Top each egg half with a small stick of celery.
