Bubbledogs: Champagne & Hot Dogs Concept Returning As Summer Pop-Up

We’ve all heard of champagne and oysters – but what about pairing fizz with hot dogs? That’s the premise of Bubbledogs, the cult concept which is set to return to London this summer as a pop-up.

Sandia Chang & James Knappett’s Bubbledogs Is Back

Arriving on the terrace of Mayfair’s 45 Park Lane this May, Bubbledogs at 45 has been created by original founders, husband-and-wife duo Sandia Chang and James Knappett, alongside the hotel’s executive chef Elliott Grover.

The menu will blend Grover’s American-inspired cuisine with Knappett’s focus on British flavours, paired with grower champagnes selected by Chang. Don’t expect your average hot dogs: these are top-quality dishes featuring luxury ingredients, made to Bubbledogs’ specifications using meat from The Franconian Sausage Company, served within freshly baked rolls from the CUT Pastry Kitchen. Highlights will include the Native Dog, made with crispy lobster tempura and beluga caviar; The Kagoshima, which features wagyu striploin and summer truffle; and Fourth of July, a combination of spicy BBQ sauce and crispy bacon.

Alongside this, diners can enjoy fun finger food such as tater tots with Japanese togarashi, mac ‘n’ cheese, and Bubbledogs’ signature buffalo chicken wings. It’s not just about the savoury stuff either: there will also be a chocolate hot dog made with Jivara chocolate ganache, served on a cinnamon brioche.

Chef Chang and sommelier Knappett first opened Bubbledogs in Fitzrovia back in 2012. Housed within Kitchen Table, the pair’s chef’s table-style, Michelin-starred restaurant, it was a big hit with Londoners, but sadly closed in 2020 after falling victim to the pandemic. Kitchen Table, however, reopened in 2021 with a fresh new look and menu.

Speaking about the collaboration, Grover said: ‘I am thrilled to collaborate with James and Sandia, the creative minds behind Bubbledogs and Kitchen Table. This partnership will offer a unique dining experience with innovative and fun dishes. For devoted Bubbledogs enthusiasts, it’s the perfect chance to savour their beloved gourmet hotdogs again and enjoy the summer on our beautiful terrace.’
