How To Make TikTok’s Chickpea Blondies

You might use chickpeas to jazz up salads or toss into curries, but did you know they can also be used in baking? When pureed, these magical little legumes create a batter which can replace the traditional flour. By adding ingredients like nut butter and chocolate chips, the chickpea flavour is masked – but you still have all the nutritional benefits, creating the perfect healthy snack that still feels like a treat. 

What Are Chickpea Blondies?

Often, the water from chickpeas – known as aquafaba – is used in baking recipes as a replacement for eggs. However, chickpea blondies use a different technique. Instead, the beans are drained well, then blended in a food processor to create a smooth, creamy texture that resembles cookie dough. This is mixed with ingredients such as peanut butter, tahini, maple syrup, honey, milk and baking powder to make gooey, chewy blondies.

What Are The Nutritional Benefits?

These blondies offer a whole host of health benefits. Chickpeas, also known as garbanzo beans, are a great source of plant-based protein, iron, vitamin B and fibre, and research suggests they can boost heart health and improve digestion. 

Chickpea Blondies Recipe

TikTok is filled with takes on this trending recipe right now, but one of the most popular comes from doctor and nutritionist Dr Hazel Wallace, known as @thefoodmedic. Hazel was ahead of the trend, including a chickpea blondie recipe in her 2018 cookbook – and now she has created a new one, shared below.

(available on Amazon & all good book stores 👀) I’m not suggesting this recipe replaces the classic blondie but it’s a great sweet snack thats packed with fibre, plant-based protein and whole food ingredients 🤝 Don’t knock them till you try it! 😙 ingredients ✨1 tin of chickpeas, rinsed WELL and drained ✨125g smooth peanut butter (tahini works well too!) ✨90ml of maple syrup (or honey) ✨pinch of salt ✨2-3 TBSP milk ✨1 tsp baking powder ✨60g dark chocolate chips method 1. preheat the oven to 200c 2. grease & line a small square or round cake tin. 3. add all the ingredients except the chocolate chips to a blender (add the milk last to achieve desired cake batter consistency) 4. stir in the chocolate chips 5. Bake for 15-18 minutes – drizzle extra chocolate & pb on top if you wish. 6. slice when cooled and stor in an airtight container for 5 days #chickpeas #chickpeablondies #viralrecipes ♬ sonido original – ・゚✧

Ingredients:

  • 1 tin chickpeas, rinsed well and drained
  • 125g smooth peanut butter (or tahini)
  • 90ml maple syrup (or honey)
  • Pinch of salt
  • 2 – 3 tbsp milk
  • 1 tsp baking powder
  • 60g dark chocolate chips

Method:

  1. Preheat the oven to 200 degrees.
  2. Grease and line a small square or round cake tin.
  3. Add all the ingredients except the chocolate chips to a blender (add the milk last to achieve desired cake batter consistency).
  4. Stir in the chocolate chips.
  5. Bake for 15 – 18 minutes.
  6. Drizzle extra chocolate & peanut butter on top if you wish.
  7. Slice when cooled and store in an airtight container for five days.
