Recipe: Marry Me Sausage Orzo Soup

The 'Marry Me' recipes trend is going nowhere


It’s a year since Marry Me Chicken went viral on TikTok, the recipe which, as the story goes, is so good it’ll make your dinner guest propose. This sparked a whole host of twists on the trend – from ramen to butter beans. The latest? Marry Me Orzo Soup, a nourishing, hearty broth that’s perfect for autumn/winter. With its small size, orzo is the ideal type of pasta to use in soups, while the sausage adds a rich flavour – jazzed up with plenty of veggies and herbs. We’ve collated some of the most popular recipes on TikTok to create the ultimate C&TH version.

How To Make Marry Me Orzo Soup

Ingredients:

  • 1 tbsp olive oil
  • 400g sausages
  • 1 onion
  • 2 cloves garlic
  • 1 tbsp tomato puree
  • 6 – 8 sun-dried tomatoes
  • 1 stick of celery, chopped
  • 1 tsp dried oregano
  • 1.5 litres stock
  • Parmesan cheese
  • 240g orzo
  • 40g Parmesan
  • Handful of spinach
  • Handful of fresh basil

Method:

  1. Chop the sausages into small pieces. 
  2. Heat a frying pan with olive oil, and fry the sausages until they are browned all the way through and seared on the outside. 
  3. Transfer the sausages to a separate bowl.
  4. Dice the onion. Add it to the pan and fry for a couple of minutes, then add the garlic and fry for another minute.
  5. Add the tomato puree, sun-dried tomatoes, celery and oregano. Cook for five minutes.
  6. Add the stock, along with the orzo.
  7. Simmer for around 12 minutes until the orzo is cooked.
  8. Add the sausage, Parmesan and spinach, and cook for a couple more minutes.
  9. Sprinkle some fresh basil on top and enjoy.
