Some of TikTok’s big food trends are bizarre, OTT creations that, really, we probably wouldn’t make more than once (million dollar spaghetti, we’re looking at you). But the best ones are the simple, delicious recipe ideas that can be whizzed up quickly, just like the latest to go viral: the tortilla quiche bake. Here’s how to make your own at home.

What Is The Tortilla Quiche Bake?

There’s nothing complex or gimmicky about the tortilla quiche bake. It’s essentially a baked omelette wrapped in a tortilla, giving it a crispy base that resembles a quiche. You can jazz up with your favorite veggies, cheese and herbs to make the perfect easy breakfast or lunch, which can be prepared in advance, ideal for taking into work.

A balance of carbs (the tortilla wrap), protein (the eggs) and colourful veggies, it’s a nutritious option too. Some TikTokers have been mixing cottage cheese in for an extra protein boost – an ingredient that has taken off on the platform lately thanks to its plethora of health benefits. The recipe could be served with some salad and topped with chopped avocado for another dose of greens and healthy fat.

Tortilla Quiche Bake Recipe

Ingredients:

  • 1 large tortilla wrap
  • 2 – 3 eggs
  • Handful of vegetables (e.g. broccoli, spinach, peppers, courgettes, tomatoes, mushrooms)
  • Handful of grated cheese (cheddar or mozzarella)
  • Salt and pepper
  • Optional: herbs and spices for flavouring (e.g. oregano, chilli flakes)

Method:

  1. Turn the oven on to 180 degrees.
  2. Place a tortilla wrap in a circular oven dish with a bit of depth to it.
  3. Crack two or three eggs inside the wrap, season with salt and pepper, and whisk them.
  4. Mix in the vegetables, and sprinkle the cheese on top. 
  5. Place in the oven for 15-20 minutes, or until the quiche goes golden at the top and the eggs are fully cooked through.
  6. Slice into pieces and enjoy!
