The Scene

Stepping inside this show-stopping, ultra-modern brasserie, part of the five-star Fairmont, it’s hard to believe you’re in the middle of a 40-acre property on the edge of Windsor Great Park. There’s a lot to take in – from the interactive kitchen counter, where you can ogle chefs engaging in culinary theatrics, and main dining area with its focus on tableside service, to the dazzling central bar and lounge, where you’ll be treated to mesmerising mixology displays, and a DJ at the decks.

Each distinct space has been cleverly designed to offer a different experience, yet cohesively so. Moody lighting, warm woods and plush textures, subtle equestrian accents that nod to Windsor’s heritage, and cosy banquette seating combine to create an intimate, unstuffy vibe – more Shoreditch than Mayfair. On the evening C&TH dined there, we spotted multi-generational families, courting couples and girls’-night-out groups, all having such a good time, it felt like we’d walked into the best party in town.

The Drinks

You’ll find it hard to tear yourself away from the glitzy bar, both before and after dinner. Or simply perch there for the evening and be entertained by its troupe of bartenders mixing such moreish cocktails as the Rose Petal martini, with vodka, lychee and pink grapefruit, or the gin-based Bees Knees, made with Fairmont’s own honey. There’s also a substantial champagne, English sparkling and whisky menu. The wine list includes both well-known and unexpected labels, including a deliciously crisp Hungarian Dobogo Tokaji Dry Furmint (2021), which you can order by the glass or bottle.

The Food

The modern European menu puts the focus on ingredient-led cooking with a theatrical flourish: a charcoal robata grill adds drama to the open kitchen while a raw bar offers such temptations as native oysters and fancy crustaceans. Classic dishes, including Dover sole meuniere and crispy pork belly, are finished tableside, and desserts (the Basque cheesecake is drool-worthy) are delivered via a roaming trolley. Classically-trained executive head chef Siddharth Krishna, who has helmed kitchens around the world, from India to the Bahamas, keeps your palette on its toes with dishes like aged beef cured with koji, and scallop carbonara with bottarga and pecorino.

We couldn’t get enough of the spicy tuna with crispy nori tostada and crudites with caramelised and spiced yoghurt dip. The bright-eyed enthusiasm of the waiting staff reinforces the relaxed liveliness of the place.
