6 Drinks Trends Set To Dominate Summer 2025, According To Experts

An Aperol Spritz in a pub garden. Ice-cold beers at a festival. Pimm’s to kick off a day at Wimbledon. Chilled rosé in buckets by the sea. Summer has long been defined by its signature drinks, but what will the coolest kids be sipping this year? We asked a handful of bartenders and experts to share their insight on the top drinks trends of summer 2025.

The Big Drinks Trends For Summer 2025

Pink Fizz

The champagne sector has been struggling in recent years, but a recent report suggests things could be looking up for the industry – particularly when it comes to the pink variety. New data from the Comité Interprofessionnel du Vin de Champagne (CIVC) and Nielsen found rosé champagne sales grew by 11 percent in early 2025, and it’s likely this figure will rise as we get into the summer season. ‘There are two styles dominating the wine space when it comes to popularity – sparkling and pink,’ says wine writer and presenter Libby Brodie. ‘Both of these are doing well – even more so when they are combined.’

So what’s trending when it comes to still rosé? ‘This year, we’re seeing a real focus on elegance, provenance, and drinkability,’ says Andrea Fasan, Head Sommelier and Wine Buyer at La Petite Maison. This summer, swerve Whispering Angel for Château La Coste, the buzzy A-list favourite from the idyllic Provencal hotel.

Mini Cocktails

Tiny cocktails have been all over bar menus in 2025, and no doubt the trend will continue into summer. There’s a particular buzz about mini martinis right now: Old Street hotpot Tayer & Elementary is renowned for its ‘one sip martini’, while Soho restaurant Rita’s serves a tiny martini with lemon oil and an optional jalapeño popper gilda. ‘Not only are these cute little cocktails excellent TikTok and Instagram fodder but they play into mindful drinking,’ Brodie says. ‘People increasingly want to limit their intake, from “zebra-striping” to the rise of low or no options, so expertly crafted tiny tasters means people can enjoy a beautiful cocktail but not risk the next day.’

Premium Drinks

Stats show people are drinking less than they used to, particularly the younger generations. But this has led to a rise in premium serves, observes Joe McCanta, Global Director of Brand Experience of GREY GOOSE. ‘I think there is a huge trend in premiumisation – people might be drinking a bit less, but when they drink they want something really worth it, made with the best possible spirits, expertly mixed and with only the freshest of ingredients,’ he says. ‘It seems that there is more appreciation of the craft of the cocktail at this point than maybe ever before due to the fact that people are expecting more.’ 

Rosorange

Move over, orange wine: summer 2025 is all about rosorange. ‘Rosorange is set to be huge this summer, and so it should be,’ Brodie notes. ‘As the love child of ever-popular rosé and ever-trendy orange, this literally harnesses two of the most ideal drinks for summer and combines them into a crisp, quaffable, surprisingly complex wine – and the colour is beautiful too.’ No need to shell out on this one either: one of the most popular bottles is Aldi’s £9.99 blend, which went viral on TikTok last summer (and has Brodie’s seal of approval).

Light & Sparkling Reds

Historically red wine has been viewed as more of a winter drink, but last summer we saw a rise in lighter, chilled varieties – a trend that experts predict will gain more momentum in 2025. ‘I’m loving the rise of lighter-style reds – soft, elegant wines that are lower in alcohol, gently oaked (if at all), and often served slightly chilled,’ says Sarah Burvill, Senior Winemaker at Bird in Hand Winery. ‘They feel effortlessly modern and food-friendly, with bright fruit, perfume, and a real sense of place.’ Sparkling reds are also having a moment: according to Ocado’s end of year list in 2024, a bottle called Chill Bill was one of its most popular searches, soaring by 1,233 percent. The name to know here? ‘There is a bit of a buzz around Italy’s Lambrusco which has transitioned from unfashionable underdog to the smashable star of the summer party,’ Brodie tells us.

Canned Cocktails

The canned cocktails hype is going nowhere, with an ever-growing selection of mixologist-made tipples that are perfect for picnics and festivals. It’s set to be another strong summer for MOTH’s palm-sized tipples – the margaritas and mojitos are particularly popular – but there’s a newcomer on the scene for 2025. Margot Robbie’s Papa Salt gin has joined forces with Fever Tree to create a gin and blood orange soda. Prepare to start seeing it everywhere as the weather hots up across the country.
