Michelin Green Stars: What Are They and Which Restaurants Have Them?
The accolade recognises restaurants' sustainability practices

The 2021 Michelin guide welcomed a new feature: the Green Star, which highlights restaurants leading the way in sustainable dining. ‘They hold themselves accountable for both their ethical and environmental standards, and work with sustainable producers and suppliers to avoid waste and reduce or even remove plastic and other non-recyclable materials from their supply chain,’ says the guide.
Michelin Green Stars: What Are They and Which Restaurants Have Them?
Many of these restaurants work directly with farmers, growers and fishermen and use regenerative methods such as no-dig vegetable gardens. They also ensure a high quality of life for their staff, and often contribute to charity and education projects. Details of these practices are outlined in their entry.
Since restaurants can only qualify for the Green Star if they have been awarded a Michelin star, Bib Gourmand or plate distinction, this stresses the importance of sustainability in food excellence. It’s a big step for the future of fine dining.
In the recently released 2023 guide, a total of 31 restaurants were listed as having a Michelin Green Star. There were four new additions this year: Chantelle Nicholson’s Apricity in Mayfair, Dan Cox’s new Cornish restaurant Crocadon, farm-to-table restaurant Osip in Bruton, and Culture in Falmouth.
They join a collection of restaurants who have retained their stars from last year. That include Raymond Blanc’s Belmond Le Manoir aux Quat’ Saisons in Oxfordshire alongside The Black Swan, a cheerful pub in Oldstead with a stellar tasting menu. The UK’s first zero-waste restaurant, Silo, also has a Green Star. Founded by Dougie McMaster, Silo began its life in Brighton before relocating to Hackney Wick in London. Hugh Fearnley Whittingstall’s River Cottage Kitchen, Simon Rogan’s L’Enclume and Daylesford also have Green Stars.
