TIDE: Coworth Park Opens New Al Fresco Restaurant

An exciting summer pop-up is coming to the five-star hotel


Many restaurants across the country are capitalising on the long stint of warm weather by opening up their terraces for dining. But Berkshire hotel Coworth Park has gone one step further, launching a brand-new open-air eatery, TIDE.

Coworth Park Launches New Outdoor Dining Offering

Set on the upper terrace of the hotel’s Mansion House, TIDE is a celebration of the bountiful produce of summer, curated by Coworth Park’s executive chef Adam Smith. It’s all about showcasing seasonal fare from land and sea: think Cornish day-boat fish, Kentish strawberries, and herbs grown in the hotel’s own kitchen garden. 

On the menu you’ll find starters of grilled scallops with buttermilk and hot sauce, and baked Cornish crab custard with poached claw, alongside a raw, cured and smoked section including dishes of bluefin tuna, line-caught sea bass with sunflowers, and smoked eel and onion flatbread. 

Larger plates include Devon white chicken shawarma, tempura sole, native lobster paccheri pasta with black truffle and aged parmesan, and panzanella salad with Isle of Wight tomatoes and grilled prawns. There’s also a large sharing Cornish turbot, and Porterhouse steak, as well as sides of matchstick potatoes and BBQ sprouting broccoli.

Puddings will be suitably summery, such as strawberries with yuzu posset, tiramisu and summer pudding with elderflower cream.

On the drinks side, diners can enjoy English sparkling wine, still wine, cocktails and non-alcoholic tipples created in partnership with Sussex-based vineyard Rathfinny. Cocktail highlights include an Estate Elderflower Verbena Spritz and a Seven Sisters Sussex Martini.

‘TIDE is all about capturing a moment in time, the height of the British summer,’ says Smith. ‘It’s a chance to celebrate the season’s finest ingredients, cooked simply and enjoyed in one of the most beautiful spots on the estate.’

Located just a 45 minute drive from London and housed in a 17th-century mansion, Coworth Park is one of the UK’s best-loved country hotels. Sister to the Dorchester Hotel in Mayfair, London, it’s set amid 240 acres of picturesque meadow next to Windsor Great Park near Ascot. There are 71 beautifully designed rooms set across the main house, nearby stables and cottages, including 22 suites.

TIDE at Coworth Park

The recently refurbished standout spa is a big draw, featuring a heated swimming pool and outdoor terrace, plus treatments from Natura Bissé, Made for Life Organics and Wildsmith.

Coworth Park is also renowned for its culinary offering: alongside TIDE, there’s Michelin-starred restaurant WOVEN by Adam Smith, British eatery The Barn, and traditional afternoon tea served in the Drawing Room. 

Smith has been at the helm of the hotel’s kitchen since 2016. He earned his stripes working at The Ritz, where he climbed the ranks before landing a head chef position at The Devonshire Arms Hotel’s Burlington Restaurant in north Yorkshire, which went on to receive four AA rosettes. 

At Coworth Park, Smith focuses on classical cooking with French influence. His restaurant Woven has been a big hit since opening in 2023, securing a Michelin star within just six months.
