World’s First Zero-Waste Restaurant Silo To Host 10-Year Anniversary Dinner

Over the past decade, eateries across the world have transformed their kitchens, implementing inventive ways to cut waste. But Douglas McMaster was doing it long before it was mainstream. The pioneering chef opened the world’s first zero-waste restaurant, Silo, in Brighton in 2014, paving the way for a new era of environmentally conscious fine dining. Ten years on, he’s marking the anniversary with a special dinner.

Silo To Celebrate Anniversary With Ruinart Dinner

Taking place on 17 June 2025, the event will be hosted at Silo in Hackney Wick, where McMaster relocated the restaurant in 2019. In a full circle moment, McMaster is joining forces with his long-term friend, artist and visionary Joost Bakker: the person who challenged McMaster to create a zero-waste eatery years back in Sydney.

The evening will begin with a drinks reception from Ruinart champagne, followed by a hosted panel talk on the topic of ‘Zero Waste: Then, Now and in the Future’, with insight from McMaster alongside chef Thomasina Miers and Wildfarmed’s George Lamb.

Next, diners will be treated to a six-course menu, showcasing some of the best of Silo’s dishes from the past decade, paired with Ruinart champagne.

Silo is arguably London’s most impressive restaurant when it comes to pushing boundaries in the environmental space. Since the eatery first opened its doors in 2014, McMaster and his team have set a new precedent for zero-waste dining, with a weekly-changing tasting menu which showcases innovative techniques. 

From hosting invasive dinner species parties to upcycling wine bottles and cultivating the UK’s first koji farm, McMaster has continuously found new and exciting ways to revolutionise our food systems. The restaurant has also acquired countless awards, including a Green Michelin Star and a listing on the World’s 50 Best Discovery platform.

Along the way, Silo has hosted a string of thought-provoking panels and debates, exploring the crossover between food, politics and socioeconomics along with guests like Skye Gyngell, Hugh Fearnley-Whittingstall and Ed Gamble.
